Mike's Pizza Dough, Italian Salad Dressing and a delish and easy Pizza sauce!

I was in a pizza mood today soooo, let's make some dough!


Mike's Pizza Dough:

100% High gluten flour 737 grams
58% Water 429-438 grams
2%  Salt 15-16 grams
Active dry yeast 3 grams
.5% Honey 4 grams 
.5% Oil 4 grams.

Add water and honey, stir to dissolve honey, add yeast and let sit 10 minutes till foamy. Mix flour and salt together. Add flour and salt to mixer bowl, then dump in water mixture. Mix till forms a ball, add oil and continue to mix until smooth and elastic. Weight out 19 oz for a sixteen inch pizza and 7 oz  each of remaining, or 6 - 7oz for calzones and personal pizza. Roll into balls and put into lightly oiled containers, cover with lid and refrigerate right away for the next day or ready to use when doubled in size!

Add flour and salt to mixer.

Add water, yeast and honey mixture!

Mix on #1 till it all starts to come together.

Like this.

Switch to #2.

Add oil and mix for about 5 more minutes.

Weigh out doughs and form into balls.

Seal good leaving no holes. You want it smooth.

1lb 3oz for a 16" pizza.

Finished ball, seam side down.

Spray container with oil.

Push dough down to flatten, put dough in container seam side down and spray top with oil. 




When done, refrigerate dough for later use. Or leave out to rise and use when almost doubled in size. I like to refrigerate it a while before using, it makes it easier to work with.

Now let's have some salad with my Homemade Italian Dressing! I usually make my dressing in a 16 water bottle.




16 oz container:
Line 1: mikes pizza sauce
Line 2: light olive or vegetable oil
Line 3: red or white wine vinegar
Spices:
1/2-1 level tsp. or to taste each of Salt..black pepper..basil..oregano..
granulated garlic powder
1 1/2-2 tsp parmesan cheese.


Keep refrigerated shake well before use and enjoy!

And for my pizza sauce...yum!

To make a quick pizza sauce:
1 can crushed tomatoes 28oz.
1 can tomato paste 6 oz
1 tsp each of basil, oregano, garlic powder, salt.
2 tsp. Parmesan cheese
1/4 tsp black pepper
1 1/2 small paste cans of water
With a wire whisk mix all together until blended well. It is ready to use or refrigerate!

Can also use as a quick pasta sauce, just heat and serve! It makes a really good pasta sauce!
