Apple Boli-Italian Hot Dog-Turkey Sausage, Tomato and Basil Boli- mini torpedo Rolls and Italian Pita bread!

Italian Pita pocket bread! Wife approved.

Oh what a day! I am completely drained and slap wore out!

First I made an apple boli for breakfast. I sauteed the apples in coconut oil with some cinnamon, ground cloves, nutmeg and a little allspice. Put it on a stretched out pizza dough and made a boli. I wanted to put cheddar in it also...😕, but I didn't have any. It turned out okay, but next time I will take it up a notch!

Then I went for an echocardiogram to checkup on an aneurysm that showed up in a CT last month. Stopped at Publix on the way home. Got home and made an Italian Hot dog for lunch. An Italian hot dog consists of hot dogs of course, peppers, onions, and potatoes stuffed in a pocket bread with your choice of ketchup or mustard...in my case I enjoy both. I used my homemade ketchup I made the other day along with the fried flatbread from the other day! Oh yea, it hit the spot!

After lunch I made batch of pizza dough.

Then made another batch of my Italian sub rolls. I made some mini torpedo rolls out of some and the rest I made into pita bread. For the pita bread I started them out in a 475 degree oven for 4-5 minutes, then lowered it to 385 and cooked about another 15 minutes. Starting out at a high temp is what gives the fast rise where the dough will puff up and create the air pocket in the middle. They came out awesome. Now I could just be saying that because I am partial to the cook...lol!

For dinner I made myself a Basil and Tomato Boli with onions and my homemade Turkey sausage. Yep, licked the plate clean again...saves on the water bill and dish soap...lmbo!

I really had to push myself. I barely made it through all that, my breathing was really bad by mid afternoon. I think I pushed myself a little to much. It is frustrating when you have a hard time breathing and you feel totally drained from doing ordinary everyday things. Oh well, suck it up buttercup...it is what it is. I am just thankful for all God has given me already! For each new day that I rise, and the family and friends I am so lucky to have!

God Bless y'all, Mike P.

  1. Love you and all your ambition to make all that healthy food. I like the Italian hot dog, minus the dog, with the sauce and cheese. Hope and pray you are doing good.
